Pay: This position has a fixed rate of $33.65/hour 

Experience: Proven experience as a Sous Chef or equivalent senior kitchen leadership role.

Education: AOS Culinary School graduate or equivalent culinary training required.

Type: Full-time; Contract  

Schedule: Flexible schedule including weekends, holidays, and extended hours as needed

Staffing Solutions of Hawaii is seeking a Culinary Sous Chef to join a growing and dynamic team!   

Job Description:  

1. Oversee daily kitchen operations, food production, and preparation to ensure quality and consistency.
2. Create and maintain master prep sheets and individual prep sheets to support efficient kitchen operations.
3. Conduct food quality checks and ensure proper labeling, dating, packing, and sealing according to specifications.
4. Manage inventory, ordering, supply levels, and invoice review to ensure accurate costs and quantities.
5. Assist with menu development, including standard, seasonal, and special-event offerings.
6. Monitor food costs, menu mix, labor, and other operational metrics to support profitability.
7. Schedule kitchen staff, manage labor needs, and delegate responsibilities effectively.
8. Lead, coach, and develop kitchen staff while maintaining a positive and accountable work environment.
9. Ensure compliance with local, state, and federal food safety, sanitation, and health regulations.
10. Make calm, decisive store-level decisions and oversee kitchen operations in the absence of the Chef de Cuisine.

Position Requirements:   

1. Strong knowledge of cooking techniques, kitchen procedures, and food service operations.
2. Knowledge of food costing, menu engineering, inventory control, ordering, and supply management.
3. Strong administrative and computer skills, including spreadsheets, databases, and word processing.
4. Excellent verbal and written communication, leadership, delegation, and team-building skills.
5. Passion for culinary excellence with a strong palate and eye for presentation.
6. Highly organized and detail-oriented with the ability to work effectively under time constraints.
7. Ability to lift up to 50 lbs. repeatedly.
8. Ability to travel between properties and venues as needed.
